How much food is healthy? And what can be recommended to a person at all? With his newly published book “Prophylaxis and Therapy through Appropriate Diet”, Klaus Wührer questions numerous nutritional recommendations. So the "official nutritional recommendation based on starch foods (bread, pasta, rice, potatoes) is fundamentally wrong". And still, Wührer claims that the recommendations are even "inflammatory and harmful to health".

Large amounts of sugar damage health. Obesity, diabetes, high blood pressure, but also rheumatic diseases and chronic pain all have their origins in poor nutrition with sugar. Nevertheless, the German Society for Nutrition (= DGE) recommends the sugar amount of 5 bars of chocolate a day. This official nutritional recommendation based on starch foods (bread, pasta, rice, potatoes) is fundamentally wrong, inflammatory and harmful to health!

With his newly published book “Prophylaxis and Therapy through Appropriate Nutrition” with hard-hitting and punctual facts, Klaus Wührer completely questions this recommendation. The biblical dance around the GOLDEN CALF is repeated in modern times in relation to the “healthy, nutrient-rich, slow carbohydrates cereals, rice and potatoes”. Klaus Wührer fetches the golden whole grain calf from the base and shows what is really in it: The main ingredient of cereals, rice and potatoes is starch:

- Starch is glucose! - Starch from whole grains appears in the blood just as quickly as plain table sugar (glycemic index). - As a result, the blood sugar load after one portion of starch (bread, pasta, rice, potatoes) is as high as after 1.5 bars of chocolate. - Starch foods are also not nutritious. Whole milk chocolate has even more nutrients than the “golden calf” wholemeal bread (Federal Food Code). - So with "healthy, slow, nutrient-rich, long-chain carbohydrates" you consume the sugar amount of 5 bars of chocolate a day - and that is officially considered healthy. Since the blood sugar load of starch is similar to that of bare sugar, starch causes as much stress and damage as table sugar - starch is sugar!

PS: By the way, the DGE has no scientific “reason for the optimal energy content of the energy-supplying nutrients” (see DGE position: standard values for the energy supply from carbohydrates and fat). (sb, pm)
